Smoky Tomato & Mint Salsa
6 Plum Tomatoes
1⁄4 Cup Fresh Mint, chopped
2 Cloves of Garlic, crushed
3 T Olive Oil
2 T of Walnut Pieces, lightly toasted
1 1⁄2 T Tomato Paste
1 t Dark Brown Sugar
1 T Fresh Rosemary
1 t Chipotle Powder
1⁄2 t Balsamic Vinegar
Juice of 1 Lime
Grated Rind of 1⁄2 Lemon
Demon Ichor to Taste
Roast tomatoes in the oven until skin turns black. Remove, and put whole tomatoes in a food processor with the garlic, sugar, tomato paste, and Balsamic vinegar. Blend for 1 minute. Transfer to a bowl and add remaining ingredients. Let stand at room temperature.
