We Googled The Hottest Wings In The World, and all we could do is laugh and scoff at the results.  Listen up mortals, this recipe will change that forever.  Hell, we’ll show you how to make them yourself, and we’ll even give you a few variations with additional suggestions.

Having been forewarned, if you now feel that you are ready for the Hottest Wings In The World, read on.

While the wing sauce we will be using is very hot and flavorful, the secret to Demon Wings is the rub.  As such Demon Wings are baked, not deep-fried.  Baking locks in ALL of the heat, the awesome smoky seasoning, and natural chicken flavor of the wings.  Yes, Demon Wings DO actually taste great (at least as far as those of us that can actually handle the extreme heat are concerned).

Wings:
12 Wings (1-3 Servings depending on how daring you are)

Rub:
Salt & Freshly Ground Black Pepper
Garlic Powder and/or Onion Powder
Thyme
Volcano Dust Smoked Scorpion Powder (100% Trinidad Moruga Scorpion)

Sauce:
3 T Demon Scorpion Hot Sauce
1 T Butter
1 t Dark Brown Sugar
1-2 drops of Demon Ichor (Optional)

Method:

1. Rinse wings and pat dry.  Season lightly with Salt, Pepper, Garlic/Onion Powder and Thyme.
2. Season heavily with Volcano Dust Smoked Scorpion Powder.  Marinate in refrigerator for 2 hours or more
3. Remove from refrigerator 20-30 minutes prior to baking.
4. Preheat oven at 400
5. Align wings on baking/roasting pan and Smother them with additional Volcano Dust Smoked Scorpion Powder.
6. Bake until skin is slightly crisp (45-50 minutes)
7. While the wings are baking, melt butter; add Demon Scorpion Hot Sauce, brown sugar and Demon Ichor.
8. Remove from oven and serve at least 1 wing dry
9. Cover the remaining wings with sauce, and serve

Notes:

• Few people will be able to get through 4 Demon Wings let alone a whole dozen.  Regardless, this is a journey to Hell and back – heehee!!!
• If using Demon Ichor, resist the urge to use more than 2 drops, as it could negatively affect the flavor.  Since the volcano dust is so hot, we recommend only 1-2 drops of Demon Ichor to ensure the best flavor/heat combination.
• If cooking a larger batch of wings, set the oven to 425, drain the liquid from the baking/roasting pan after 30 minutes, and cook them an extra 10 minutes (55-60 min total) to achieve the same level of crispiness.  All ovens are different, so you simply need figure out what works best for your oven.

Substitutions

• If you have an aversion to smokiness, we feel bad you.  If that is the case, Volcano Dust Scorpion Powder will do the trick.  It’s not quite as hot, but it’s so close most people would never notice
• If you are not quite ready for this, and we know most of you are not, you could try Volcano Dust 3 or Ghost Dust.  Still hotter than what most mere mortals can handle, but not nearly in the same ring of hell, and certainly not the Hottest Wings In The World
• Demon Ghost Pepper Hot Sauce can be used in place of Demon Scorpion Hot Sauce with little deviation in flavor or heat
• Other Trinidad Scorpion Sauces we carry can also be used in place of Demon Scorpion, but we feel that the flavor will most definitely suffer.  Even though Demon Wings are the Hottest Wings In The World, you still want them to taste good!  Feel free to experiment though
• You can also try this with some of the BBQ / Wing Sauces we carry, particularly Defon’s Cluckwing Orange (a Hot Wing Competition Sauce), Volcanic Peppers Lava BBQ Sauce, or CaJohn’s Trinidad Moruga Scorpion BBQ Sauce
• Note: Sweeter Sauces, and BBQ Sauce will lower the heat a little a little, but if you follow the instructions, it really wont matter much, as you will be suffering regardless

The Naga Bhut Jolokia is a chili pepper previously recognized by Guinness World Records as the hottest pepper in the world. The pepper is also known as Naga Jolokia, ghost pepper, ghost chile pepper, red naga chilli, and ghost chile.

The Bhut Jolokia is a hybrid cultivated in the Indian states of Nagaland and Assam and parts of neighbouring Bangladesh. There was initially some confusion and disagreement about whether the Bhut was a Capsicum frutescens or a Capsicum chinense pepper, but DNA tests showed it to be an interspecies hybrid, mostly C. chinense with some C. frutescensgenes.

In 2007, Guinness World Records certified that the Bhut Jolokia was the world’s hottest chili pepper, 10,000 times hotter than Tabasco sauce; however, it has since been superseded by the Trinidad Moruga Scorpion.New Mexico State University’s Chile Pepper Institute states that it is still the hottest chile pepper that is commercially available.

The pepper is called by different names in different regions. North of the Brahmaputra, it is widely called Bhut Jolokia or Bhoot Jolokia, literally translating to ‘Ghost Chilli’

In 2000, India’s Defence Research Laboratory (DRL) reported a rating of 855,000 heat units (SHU) on the Scoville scale, and in 2004 a rating of 1,041,427 units was made using HPLC analysis - Wikipedia
